There are two options to choose from. Either investigate the possibility of using Quark to load docbook files, and then save as the right apress template. This has the pros of not loosing any content, however who knows if it works.

The other option is to write stylesheet. I have basic version ready, but I have feeling that certain information are missing from it. Also it is question whether the styles will match the apress requirements and how much work will be necessary to tune it.

** Formatting is mostly very good. The biggest thing I can see is that instead of using Body Text, you have formatted the text as Default, which is not an Apress style. You should also use Body Text First for the first paragraph after any heading. You have defined a style as "Text Body," but this is backward. So rename this to match the Apress style name. Then see if you can convert everything that's currently "Default" to "Body Text." It's probably a lot of work to reformat all the opening paragraphs as "Body Text First," but have a crack at it. If it fails, don't spend too much time on it.
